I love chicken! Pretty much anyway you can cook it but smoking it on the Pit Barrel Cooker has become my favorite by far.

The last couple of times I smoked chicken I added my favorite rub and placed on the smoker. After a few minutes I sprayed with olive oil and speedily placed the lid back on.
The crispy skin was delicious. Yes it was super crispy! I am not sure if it’s the smoker or the oil but I used to always struggle with getting the skin crispy.
Next time I cook chicken I will be sure to demonstrate the crispiness of the skin.
My wife said it kind of reminder her of pork skins though!
